Foodie Friday #22 - Stuffed Peppers

This week's recipe comes from a seasoned Foodie Friday submitter, Sandra, aka Coco's mom. Because of Sandra's Peruvian background, her recipes almost always take something we know well and put a little Peruvian twist on them - which is always a lot of fun. So enjoy this week's classic, yet updated Peruvian dish!

The original recipe is called Stuffed Bell Peppers (it sounds better in spanish - Pimientos Rellenos) and it is made with ground beef, but lately I have been preparing this using left overs: grilled steak, pork chops or chicken breast.
The ingredients are:
Ground beef
Bell peppers
Onions and garlic
Hard boiled eggs, chopped
Raisins and olives, chopped (optional)
Mozzarella cheese
Oil, salt and pepper
Sautee the onions and garlic, adding salt, pepper and any other seasoning you like (I use chili pepper paste to add flavor and a spicy touch), add the ground beef and cook throughly, until all the beef juice is reduced and the meat is golden brown. If you want to use leftovers instead, add them cut into little squares and let them cook for a while with the onions, until golden brown. Add the raisins and olives and finally add the eggs.

In the meantime, boil the bell peppers in water for a few minutes. Dont let them get soft, they need to be cooked but stay firm.


Remove the bell peppers, take off the green part leaving a little hole on top. Fill the pepper with the cooked mixture and cover with a square of mozzarella cheese.

Put in the oven for 10 minutes. This dish has a mixture of flavors: sweet and salty, fruity and spicy. Enjoy!

Oh my...I have to remember not to look at the pictures when I am hungry!!!
That looks so delicious. I will try these as soon as we have a cooler day to put the oven on! (We only have A/C in the pugs room! Haha...)

That looks great, Sandra! I've made a lot of stuffed bell peppers in my day, but never any with hard boiled eggs in them. That looks YUM-O!

That is a different approach to stuffed bell peppers and I think they sound pretty good. Makes me really hungry !
